Polish Recipes
Red Beet Soup
6 medium beets
6 cups beef broth
1 tablespoon vinegar
1 tablespoon sugar
1/8 teaspoon pepper
dash garlic powder
Wash and bake beets for ½ hour in
350˚ oven. Cool and peel, then grate coarsely. Add to broth and
simmer 5 minutes. Add vinegar and seasonings. Serve with crackers.
Serves 6.
Cucumber Salad
3 cucumbers, peeled and thinly sliced
1 small onion, peeled and thinly sliced
1 cup sour cream
1 tablespoon dill seed
salt and pepper to taste
Layer cucumbers in bowl, adding
salt to each layer. Leave overnight. Drain the following morning and
add all other ingredients. Refrigerate for several hours and serve
chilled. Serves 6.
Potato Pancakes
2 lbs. potatoes, chunked
1 large onion, quartered
¾ cup flour
2 eggs
salt and pepper to taste
Mix all ingredients in blender,
adding flour as needed to get consistency desired. Pour 2
teaspoonfuls onto hot grease on slow fire and cook until golden
brown. Serve with applesauce or sour cream.
Stuffed Cabbage
1 head cabbage
½ lb. ground beef
½ lb. ground pork
1 ½ cups rice, boiled
1 egg
one small onion, chopped
1 30 oz. can tomato sauce
½ cup catsup
Freeze cabbage overnight and remove
from freezer to thaw completely. Cut off thick part of leaves if
necessary to make rolling easier. Mix together meats and rice. Roll
approximately 2 tablespoons meat mixture into each cabbage leaf and
place in large casserole. Add chopped onion on top of rolls. Shred
any leftover cabbage and add to top of rolls. Mix tomato sauce and
catsup with salt and pepper to taste (add 4 tablespoons bacon
drippings if desired) and pour over rolls. Add water if necessary
while baking. Bake 2 hours at 350˚.
Angel Wings
4 egg yolks
2 teaspoons confectioner sugar
¼ cup heavy cream
¼ teaspoon salt
2 cups flour
1 tablespoon brandy or vodka
1 tablespoon vanilla
Beat egg yolks until thick. Add
sugar and cream. Beat until well blended. Add remaining ingredients.
Chill dough for easier handling. Roll onto lightly floured board.
Cut into 1 ½ inch diamond shapes. Slit center of each diamond. Slip
one long end into slit and pull gently to make bow. Fry in hot deep
fat (375˚) until just a very light brown. Drain. When cool, sprinkle
with confectioner sugar. |
